Goulash

Serves 4
Prep time 15 minutes
Cooking time 1 ½ hours

1tbs paprika
¼ cup plain flour
600g diced beef
2tbs butter
2 brown onions, finely sliced
2tsp caraway seeds
6 crushed garlic cloves or 2tbs of jar garlic
2 400g cans peeled, whole tomatoes
1 cup chicken stock
2 large chopped potatoes
Chopped veg (as wanted)

1) Mix paprika and flour. Add the beef and coat well (dredge).
2) Melt the butter butter in a large (stew) pot and saute the onions and caraway seeds. Add the garlic and cook on a gentle heat for 3 minutes.
3) Add the beef to the pot and cook on high for 5 minutes. Add liquids and bring to the boil.
4) Add potatoes and any other vegetables, cover and cook for an hour on a low heat.
5) Goulash is lovely served with a dollop of sour cream.
